Caviar operates as part of DoorDash. Whatever the storefront looks like from the outside, the underlying economics are the same marketplace economics: a commission off the top of every order, processing on the transaction, and a stack of fees on the customer’s side. “Premium” describes the presentation, not the cut. On a $40 order it works out like this.

When you order straight from us, there is no commission coming out of the kitchen. You pay a small ordering fee and nothing else — which is exactly why the price you see here is the same price you’d pay calling the truck or walking up to the window. No inflated menu, no surprise stack at checkout.
