The thing most people never see is that a single delivery order gets charged on three separate fronts. The kitchen pays a commission that can reach roughly 30%. The transaction pays card processing of around 3%. And you pay service and delivery fees that can add roughly another 15% at checkout. Stack them up and close to half the value of the order can disappear into the middle.
